Tonight, my sister made Navajo Tacos for dinner. Everyone loved them so much. My sister and I were reminded of our days in elementary school. They served Navajo Tacos for lunch and we loved them. These tacos are super easy to make.
We had extra bread so my dad and I put a little honey on the bread and it was delicious. If you have extra bred you could top it with powdered sugar, honey, butter, honey butter, or whatever you like.
(Use gluten free baking flour to make the bread)
To make the bread:
3 cups flour
3 tsps baking powder
½ tsp salt
¾ cup milk
About 1/3 cup water
Mix the dry ingredients together. Add in milk and water and mix. Place a towel over the bowl and let the dough sit for 30 to 45 minutes. To fry the bread, roll the dough out on a flowered surface to about seven inches. Place dough in a pan with 2 Tbsps vegetable oil. Cook each side until golden brown.
For the meat:
Cook 1 pound of ground beef and half a white onion together. Once beef is cooked through, add 2 cans of pinto beans. Simmer for about 5 to 10 minutes. Season with salt and pepper.
Build the taco however you prefer. Then top with salsa, lettuce, sour cream, cheese, tortilla chips, whatever you like. Remember, you can use the bread recipe for scones.
