This recipe was made by my mom. She found the recipe on the Campbells kitchen website and modified it. My mom said Chicken a la King was one of her favorite lunches at school when she was young. It was a hit! It was so simple to make and you can add any vegetables you want. My mom suggested adding mushrooms next time (I’m not a fan of mushrooms), you could also add red or green peppers, but the sky is the limit here.

Chicken a la King

1 can cream of chicken soup
½ cup milk
1 and ½ cups chicken (mom used frozen chicken pieces)
1-2 cups frozen pees
1-2 cups frozen carrots
1 Tbsp butter
Salt and Pepper
Sauté chicken in butter for a few minutes. Add in the frozen vegetables and stir. Pour in the soup, milk, salt, pepper, and stir. Cook until bubbly. Let simmer for about 15 minutes. Cook rice according to package. Serve chicken mixture over rice. You can add any vegetables you want, such as green peppers and mushrooms.
