This afternoon I made white chili for dinner. This recipe is from our cousin Amy. Amy says this chili is amazing, she is right, it is fantastic! I have never made homemade chili, and I don’t think I’ve ever had white chili before. I will be making this again. Everyone was going crazy for the chili. We didn’t top with anything because the sour cream makes the chili amazing. First try making homemade chili is a total success. Thanks to my dad for helping me make the chili.
You have got to try this chili, it is so good!

White Chili
1 lb. boneless skinless chicken, cubed (more than half a bag of frozen cooked chicken pieces)
1 med onion, chopped (1/4 cup dry minced onions)
1 ½ tsps. garlic powder
1 TBSP oil
2 cans (15.5 oz size) Northern Beans, drained & rinsed
1 can (14.5 oz size) Chicken Broth
2 cans (4 oz) green chilies, undrained
1 tsp. salt
1 tsp. cumin
1 tsp. oregano
½ tsp. black pepper
¼ tsp. cayenne pepper
1 C. sour cream
½ C. whipping cream (not cool whip but real cream found in the dairy section)
In a big skillet sauté chicken, onion and garlic in oil till chicken is no longer pink. In a large pot, add beans, broth, chilies and all seasonings and bring to a boil. Reduce & simmer uncovered 30 mins. Remove from heat & add sour cream and whip cream. Serve hot. Makes approx. 6 servings.
