If you haven’t figured it out, I love dessert. It’s a problem and I am not afraid to admit it. I love chocolate. I also love chocolate and peanut butter. Today’s is for No-Bake Reeses Peanut Butter Bars.
My dad found this recipe. Despite my best efforts to not make a dessert this weekend, I caved, and decided to make these. I have made peanut butter bars before, but they required the oven and stove top to make the frosting.
I was excited to try this recipe because the only appliances used are: the microwave, fridge, and like me, if you don’t have a food processor, you can get your anger out by crushing up the graham crackers with a rolling pin and a ziplock bag.
A word of warning: You may want to make these for a party, or give them away to friends and neighbors. They are very rich.
If you want a simple recipe that is packed with peanut butter and chocolate (which makes almost everyone happy), try this recipe. As always, thanks to my awesome dad for sharing this recipe and helping me when I was making it. My dad is a trooper, through all my cooking and baking adventures.
No-Bake Reeses Peanut Butter Bars!
1 cup salted butter (melted)
2 cups graham cracker crumbs (gluten free)
¼ cup brown sugar
1 and ¾ cups powdered sugar
1 cup peanut butter
½ tsp vanilla
1 (12 oz.) bag milk chocolate chips
Combined all ingredients, except chocolate chips in a medium bowl. Stir until the mixture is smooth and creamy.
Pour peanut butter mixture into a greased 9-13 pan. Melt chocolate chips in the microwave (50% power) for 1-2 minutes. Stir chocolate and pour over the peanut butter mixture.
Spread chocolate with a spatula. To even out chocolate, tap pan on the counter.
Refrigerate bars for 1 hour. Cut while bars are still cool.
