This recipe is a twist on nachos. My mom and I decided to make our own version of gourmet nachos after seeing something similar on a local news show. We topped the nachos with shredded lettuce. This is quick to make and tastes fantastic! This has become a new favorite meal in our house.
You can put anything you’d like on these nachos; this is what we came up with. These are great on their own with a side salad, if you don’t want to put shredded lettuce on top.
Gourmet Nachos
1 pound ground beef (I’m sure ground turkey would be good as well)
1 16 oz can refried beans
Two cups shredded cheese (any kind)
1 bag shredded lettuce
1 bag tortilla chips (or any kind)
1 packet taco seasoning (or you can make your own with cumin, chili powder, onion powder, etc).
¾ cup water
Toppings
Preheat oven to 350. Bake uncovered for 15 minutes.
Brown ground beef in a pan. Add refried beans, seasoning, and water if necessary to the pan. Stir and heat through.
Put a layer of chips on the bottom of a 9-13 baking dish and set aside.
Put half the meat mixture on top of the chips and top with half the cheese.
Add a second layer of chips, meat mixture, top with remaining cheese, and bake.
Once the nachos are all melted and gooey, top with shredded lettuce and other toppings such as olives, salsa, tomatoes, etc.
