Fiesta Chicken April 16, 2018
This year has been crazy…But we’re back with a delicious recipe!
My sister found this delicious Mexican meal that you can make in your crock pot. It would be perfect for lunch or dinner. It is so easy to throw together; feel free to add other ingredients if you’d like. 😊
We served it over rice, but it would be delicious in a burrito, hard or soft taco shells, topping tortilla chips, and maybe even on a salad. The options are endless for this meal.
Give it a try, it is fantastic!
Layer in crock pot in the following order:
1 package frozen shredded chicken
1 Bag frozen corn
1 can black beans, drained
1 (8 oz) block cream cheese
1 packet fiesta ranch mix
1 Layer everything in crock pot on high, for 4 hours.
2 Stir once cream cheese has melted which is usually about 2 or 3 hours.
3 Let it marinate 30 minutes to 1 hour; whatever you think it needs.
4 Serve over rice, make burritos, inside hard or soft taco shells, over tortilla chips, or topping salads.
Chicken Pot Pie and Clothes November 5, 2016

Before I get to the recipe I wanted to let you all know that I am becoming a consultant for LuLaRoe! CHICKEN POT PIE SLOW COOKER
2 cans condensed cream of chicken soup
4-5 medium potatoes, peeled and diced
2 cups frozen peas and carrots
1 Chicken bullion cube
Salt and Pepper to taste
Optional Seasonings: 1 bay leaf, 1 tsp dried parsley, 1 tsp onion powder
½ -1 cup shredded cheese
Biscuit mix of your choice!
In Crock Pot, combine chicken breasts, potatoes, frozen vegetables, bullion cube, cream of chicken soup and mix well. Add additional salt and pepper if desired.
Cook on low for 6-8 hours until chicken is fully cooked. Use a sturdy spoon to break up the chicken after cooking.
Serve over biscuits
Top with shredded cheese.
Creamy Italian Chicken October 17, 2016
A few weeks ago a friend invited me to a Facebook group that was created to make five healthy crockpot dinners in one week. In my opinion, the best thing about the group was all of the recipes that were shared by different group members in the comments of each meal post. Now, I have a ton of new crockpot recipes to try and I am so excited to share them with you!
The first recipe is a simple chicken dinner that can be thrown together in less than ten minutes. We served it with rice and cooked vegetables; add extra sauce on your chicken and rice, it is delicious!
I hope these crockpot recipes make dinner easier for all of us. 🙂
Creamy Italian chicken
1 (8 oz) package cream cheese softened
1 can cream of chicken soup
1 packet of Italian seasoning
1. Spray crockpot with cooking spray.
2. Put chicken in and top with Italian seasoning.
3. Mix the softened cream cheese and soup together; pour on top of chicken. If you have any seasoning left over, mix it in to the sauce.
5. Cook on low 4 to 6 hours.
Chicken, Rice and Veggies August 6, 2016
This month’s recipe is an easy lunch or dinner to throw together. It only has three ingredients: rice, vegetables and chicken. For easy preparation, use a rotisserie chicken, shredded and skin removed.
This meal was created by our uncle. A few months ago, Grandma Muse and our uncle hosted my sister’s birthday lunch. Our uncle served this dish and told my mom how to make it. I have wanted to try this dish ever since and today my parents and I finally made it. We used a rotisserie chicken and concluded that this meal is delicious. It started raining when the meal was cooking; I thought it was perfect timing as we ate this meal for lunch.
This meal would be great with a fruit salad and some cornbread or biscuits on the side.

Easy Chicken, Rice, and Vegetables
1 box of Zatarains yellow rice
1 package of frozen mixed vegetables (any kind)
1 Rotisserie chicken, skin removed and shredded. Or cook chicken and shred.
1. Cook rice according to package directions.
2. Cook mixed vegetables according to package directions.
3. Remove skin from rotisserie chicken and shred, or cook chicken and shred.
4. Combined chicken, rice and vegetables in a bowl. Serve immediately.
