Chicken Pot Pie and Clothes November 5, 2016

Hey gals and gents!! It’s the older sister…. gasp…. yeah I make and appearance once a blue moon. 😊

Before I get to the recipe I wanted to let you all know that I am becoming a consultant for LuLaRoe!  So the recipe I choose is a different take than the typical Chicken Pot Pie. It’s more like a Chicken Pot Dressing to put over a biscuit of your choice. Yum! Seriously it’s amazingly delicious!!

CHICKEN POT PIE SLOW COOKER


Ingredients
3-4 frozen chicken breasts

2 cans condensed cream of chicken soup

4-5 medium potatoes, peeled and diced

2 cups frozen peas and carrots

1 Chicken bullion cube

Salt and Pepper to taste

Optional Seasonings: 1 bay leaf, 1 tsp dried parsley, 1 tsp onion powder

½ -1 cup shredded cheese

Biscuit mix of your choice!

Directions
In Crock Pot, combine chicken breasts, potatoes, frozen vegetables, bullion cube, cream of chicken soup and mix well. Add additional salt and pepper if desired.

Cook on low for 6-8 hours until chicken is fully cooked. Use a sturdy spoon to break up the chicken after cooking.

Prepare biscuits

Serve over biscuits

Top with shredded cheese.

Creamy Italian Chicken  October 17, 2016

Hi!

A few weeks ago a friend invited me to a Facebook group that was created to make five healthy crockpot dinners in one week. In my opinion, the best thing about the group was all of the recipes that were shared by different group members in the comments of each meal post. Now, I have a ton of new crockpot recipes to try and I am so excited to share them with you!

The first recipe is a simple chicken dinner that can be thrown together in less than ten minutes. We served it with rice and cooked vegetables; add extra sauce on your chicken and rice, it is delicious!

I hope these crockpot recipes make dinner easier for all of us. 🙂

 

Creamy Italian chicken


4 chicken breasts 

1 (8 oz) package cream cheese softened 

1 can cream of chicken soup

1 packet of Italian seasoning 
Directions:

1. Spray crockpot with cooking spray.

2. Put chicken in and top with Italian seasoning.

3. Mix the softened cream cheese and soup together; pour on top of chicken. If you have any seasoning left over, mix it in to the sauce.

5. Cook on low 4 to 6 hours.

Chicken, Rice and Veggies August 6, 2016

Hi all!
This month’s recipe is an easy lunch or dinner to throw together. It only has three ingredients: rice, vegetables and chicken. For easy preparation, use a rotisserie chicken, shredded and skin removed.
This meal was created by our uncle. A few months ago, Grandma Muse and our uncle hosted my sister’s birthday lunch. Our uncle served this dish and told my mom how to make it. I have wanted to try this dish ever since and today my parents and I finally made it. We used a rotisserie chicken and concluded that this meal is delicious. It started raining when the meal was cooking; I thought it was perfect timing as we ate this meal for lunch.
This meal would be great with a fruit salad and some cornbread or biscuits on the side.

Easy Chicken, Rice, and Vegetables

1 box of Zatarains yellow rice
1 package of frozen mixed vegetables (any kind)
1 Rotisserie chicken, skin removed and shredded. Or cook chicken and shred.
 
Directions
1. Cook rice according to package directions.

2. Cook mixed vegetables according to package directions.

3. Remove skin from rotisserie chicken and shred, or cook chicken and shred.

4. Combined chicken, rice and vegetables in a bowl. Serve immediately.

Happy St. Patrick’s Day! March 17, 2016

Top of the morning to ya!
We would like to wish all of you a “Happy St. Patrick’s Day!”
I have never been to Ireland, so the following is a short list of things I love about the Emerald Isle: the landscape is so green and beautiful, shamrocks and castles, the accents are amazing, and traditional Irish music is fantastic. Being a drummer and lover of classic rock I cannot forget the bands U2, Thin Lizzie and Van Morrison; some great music right there!
On a side note, I am friends with one of Ireland’s Paralympian sprinters; fastest Paralympian in the world, Jason Smyth. He is the nicest guy.

The Five Like Challenge February 12, 2016

Normally, I do not write posts like this; however, I feel like this could be a recipe for your happiness.
Yesterday when my dad and I were driving home, we heard John Legend’s “All of me” which made my dad say: “That’s a great song.” I agreed and added Colbie Caillat’s empowering song “Try”. Both songs have wonderful messages.
As the day continued I began to think about the times I compare myself to others and how it makes me feel, disappointed and the list goes on.
I was still pondering this subject as I went to bed, when an inspired thought came to me. I thought: “When you start comparing yourself to others, you need to stop. Starting tomorrow every morning you should get up and say five things you like about yourself.” I do not know why such a simple concept has never crossed my mind until now. I suppose it is because I have never thought about it for an extended period of time.
This morning, I took The Five like Challenge  and it made me feel happier. I hope everyone who reads our blog will take this challenge and start reminding yourself how wonderful you are and the amazing things you can do.
I hope The Five like Challenge becomes a routine that we fit into our day. I also hope that it brings us more self-confidence and joy.

Happy Father’s Day June 22, 2015

To all the men who read our blog, we would like to wish you a happy Father’s Day!
If you are a man reading our blog I would like to commend you. I would also like to remind you how valuable you are to your family, even if you are not a father.
Coming from a family of two girls we had a wonderful example in our father; he was always there for us and showed us what a man should be.
I understand society is trying to make men feel like they do not mean anything to a family; let me assure the men out there, you are a huge influence in a family, especially for your daughters and the young people of the world.
Men, I hope you never forget you can change someone’s life, just by being a good example. If you are a father, you are wonderful, being there for your children; you should be proud of the family you have. If you are not a father, be proud of the man you are. Think about the young people who watch you in your daily life and try to help them better themselves.
The Lord is proud of his sons, the men who dutifully step up and help others, even if they are not biological fathers.
I hope we all stop and thank our fathers, brothers, cousins, uncles, grandfathers and anyone else who has been a father figure in our lives.
Once again, happy Father’s Day guys, especially to our wonderful father. Thank you for being here for us.

Slow Cooker Barbecue Chicken June 15, 2015

Hi guys!
This month’s recipe is really tasty and simple to make. It is Slow Cooker Barbecue Chicken. This meal is one of my favorites and its gluten free! This is our own recipe. The barbecue sauce packs a punch; I cannot remember which sauce we use so pick your favorite and go with it.
I love the slow cooker because you can enjoy yourself while the slow cooker does all the cooking for you… Well, some of the cooking. 🙂
Normally, I insist that recipes have exact measurements, but this time I am letting you figure out the quantity you need.
We serve this meal with cooked veggies and rice. We added extra barbecue sauce on top of the rice. I recommend this because it makes the rice irresistible.

Slow Cooker Barbecue Chicken

  
Chicken breasts, Boneless and skinless (any amount)
1 (18 ounce) jar barbecue sauce (any kind and any amount needed)
Seasoning for the chicken
Cooking Spray
Water
Directions:
1. Spray slow cooker with cooking spray.
2. Place chicken breasts in slow cooker and season with seasoning.
3. Cover the chicken with water and turn on the slow cooker. Cook for approximately 5-6 hours on high and 7-8 hours on low. (Times could vary so check the chicken with a meat thermometer if you are not sure if it is done).
4. Drain the water from the slow cooker (careful not to burn yourself) and pour the barbecue sauce over the chicken.
5. Heat through about 10 to 15 minutes (or your preference).
6. Serve immediately or keep warm.
