Roast Beef and Veggies April 1, 2017

Hi everyone!
I hope you are having a delightful spring! I have a wonderful recipe for you today, and I would like to tell you about something that is coming up for me in the near future.

Now, for the recipe… This is our own recipe for roast beef and vegetables. It is simple to throw together and your slow cooker does all the work! It is delicious the day of an even better as leftovers.

Roast Beef and Vegetables


1 beef roast
Potatoes cut in pieces (we use small red potatoes with the skin left on, use as many as you want)
Carrots (baby carrots or carrot slices with ridges, as many as you want)
Seasoning (we use 1 package Liptin onion soup mix)
2 cups water
Directions:

1. Spray a large Crock pot with cooking spray. 

2. Place vegetables in crock pot, sprinkle half of the soup/seasoning on top. 

3. Add roast beef and sprinkle with remaining soup/seasoning. 

4. Add 2 cups water. 

5. Cook on high 6 to 8 hours or on low 10 to 12 hours or until vegetables are tender.

BBQ Pork Chops February 2, 2017

Hello everyone!
This month’s recipe was a creative accident that turned out to be delicious! In December 2016, we were going to have barbecue ribs, but my dad accidently bought pork chops so we decided: “What the heck, we will give barbecue pork chops a try.” I am telling you, they were delicious! You have got to try them because the way we make them is so darn simple; it makes the pork chops extremely tender. We served this dish with rice and cooked vegetables.
 
Barbecue Pork Chops


1 cup plus a little more water

8 boneless pork chops (or more) 

1 bottle BBQ sauce (any kind) 

Cooking spray

Directions

1. Spray a small crock pot with cooking spray.
2. Put pork chops in crock pot, season chops with preferred seasoning, and pour water on top.
3. Cook on low 7 to 9 hours or on high 4 to 6 hours; drain water.
4. Pour BBQ sauce on top of pork chops and heat through.

Serve with rice and cooked vegetables; great as leftovers.

Chicken Pot Pie and Clothes November 5, 2016

Hey gals and gents!! It’s the older sister…. gasp…. yeah I make and appearance once a blue moon. 😊

Before I get to the recipe I wanted to let you all know that I am becoming a consultant for LuLaRoe!  So the recipe I choose is a different take than the typical Chicken Pot Pie. It’s more like a Chicken Pot Dressing to put over a biscuit of your choice. Yum! Seriously it’s amazingly delicious!!

CHICKEN POT PIE SLOW COOKER


Ingredients
3-4 frozen chicken breasts

2 cans condensed cream of chicken soup

4-5 medium potatoes, peeled and diced

2 cups frozen peas and carrots

1 Chicken bullion cube

Salt and Pepper to taste

Optional Seasonings: 1 bay leaf, 1 tsp dried parsley, 1 tsp onion powder

½ -1 cup shredded cheese

Biscuit mix of your choice!

Directions
In Crock Pot, combine chicken breasts, potatoes, frozen vegetables, bullion cube, cream of chicken soup and mix well. Add additional salt and pepper if desired.

Cook on low for 6-8 hours until chicken is fully cooked. Use a sturdy spoon to break up the chicken after cooking.

Prepare biscuits

Serve over biscuits

Top with shredded cheese.

Creamy Italian Chicken  October 17, 2016

Hi!

A few weeks ago a friend invited me to a Facebook group that was created to make five healthy crockpot dinners in one week. In my opinion, the best thing about the group was all of the recipes that were shared by different group members in the comments of each meal post. Now, I have a ton of new crockpot recipes to try and I am so excited to share them with you!

The first recipe is a simple chicken dinner that can be thrown together in less than ten minutes. We served it with rice and cooked vegetables; add extra sauce on your chicken and rice, it is delicious!

I hope these crockpot recipes make dinner easier for all of us. 🙂

 

Creamy Italian chicken


4 chicken breasts 

1 (8 oz) package cream cheese softened 

1 can cream of chicken soup

1 packet of Italian seasoning 
Directions:

1. Spray crockpot with cooking spray.

2. Put chicken in and top with Italian seasoning.

3. Mix the softened cream cheese and soup together; pour on top of chicken. If you have any seasoning left over, mix it in to the sauce.

5. Cook on low 4 to 6 hours.

Enjoy!

 

 

Happy St. Patrick’s Day! March 17, 2016

Top of the morning to ya!
We would like to wish all of you a “Happy St. Patrick’s Day!”
I have never been to Ireland, so the following is a short list of things I love about the Emerald Isle: the landscape is so green and beautiful, shamrocks and castles, the accents are amazing, and traditional Irish music is fantastic. Being a drummer and lover of classic rock I cannot forget the bands U2, Thin Lizzie and Van Morrison; some great music right there!
On a side note, I am friends with one of Ireland’s Paralympian sprinters; fastest Paralympian in the world, Jason Smyth. He is the nicest guy.

The Five Like Challenge February 12, 2016

Normally, I do not write posts like this; however, I feel like this could be a recipe for your happiness.
Yesterday when my dad and I were driving home, we heard John Legend’s “All of me” which made my dad say: “That’s a great song.” I agreed and added Colbie Caillat’s empowering song “Try”. Both songs have wonderful messages.
As the day continued I began to think about the times I compare myself to others and how it makes me feel, disappointed and the list goes on.
I was still pondering this subject as I went to bed, when an inspired thought came to me. I thought: “When you start comparing yourself to others, you need to stop. Starting tomorrow every morning you should get up and say five things you like about yourself.” I do not know why such a simple concept has never crossed my mind until now. I suppose it is because I have never thought about it for an extended period of time.
This morning, I took The Five like Challenge  and it made me feel happier. I hope everyone who reads our blog will take this challenge and start reminding yourself how wonderful you are and the amazing things you can do.
I hope The Five like Challenge becomes a routine that we fit into our day. I also hope that it brings us more self-confidence and joy.

We have an old family favorite for this month. It is one of our favorite slow cooker meals to make; it tastes wonderful the day of an even better as leftovers. This is our own recipe for Barbecue Ribs. There are amounts on this recipe, but you can change the ingredient amounts.

Barbecue Ribs

  
1 cup plus a little more water
