Banana Cake and Whipped Frosting September 9, 2015

Hi!

Here is the special cake we made for my niece’s birthday party. My sister found the cake and frosting recipes. Both recipes are simple to make; especially the frosting.

I did not try the cake but I heard it was good. I know for a fact the strawberry frosting is incredible! I was in heaven when I tried the frosting, it was all I could do to wash my mixing bowl and stop eating it.

The frosting is light; I love how pink it is from the strawberries.

My sister suggested using this frosting as a fruit dip; I think that would be lovely.

Banana Cake


1/3 and ¼ cups flour (gluten free baking flour or almond flour)

½ tsp baking soda

¼ tsp salt

2 and ¼ tsps baking powder

1 and ¼ cups sugar

½ cup butter, melted

¼ cup buttermilk

1 and ¼ cups ripe mashed banana

2 large eggs
Preheat oven to 350 degrees F.

Mix flour, soda, salt, baking powder and sugar in bowl. Add softened butter and mix on medium speed until a mealy consistency.

Add buttermilk and mashed banana gradually and mix for 4 minutes, mixture should be light and fluffy.

Scrape mixture from sides of bowl and add the eggs, beating well after each addition.

Pour batter into two greased 9 inch cake pans. Bake for 25 minutes, cake should be golden brown.
Frosting:

1 cup heavy cream

1/3 cup sugar

3 Tbsps liquefied strawberries or whatever fruit you like
Whip the cream until it looks like whipped cream, mix in sugar.

Puree chosen fruit in a blender and add needed amount to the cream and sugar mixture; mix until well combined.

Spread on cake and enjoy!
